Caesar Dressing

Ingredients 

Number of Servings: 2.5 Cups (20-25 servings)

  • FEATURED: 2 egg yolks

  • 2-3 spoonful's Dijon mustard 

  • 2 cloves garlic, minced 

  • 2 anchovy filets 

  • 1-2 Tbsp worcestershire 

  • 1 large handful grated parmesan 

  • 1 shot glass of lemon juice 

  • 2 Tbsp olive oil 

  • 2 cups canola oil 

  • Large pinch salt 

  • Cold water

Cook Time: 5 min

Total Time: 10 min

  1. Blend egg yolks, Dijon, salt, anchovies, and garlic in the food processor. Slowly drizzle in olive oil until the mixture starts to come together, using a little less than ¼ portion before pausing to add the shot of lemon juice.  

  2. Keep blending, adding a little more oil before adding the parmesan, then the worcestershire, and then a little more oil. Add some water to thin the mixture, then continue adding the oil until the mixture starts to look like mayonnaise.  

  3. Taste the mixture for seasoning, then add cold water as needed to thin out the mixture into a consistency that makes sense for salad dressing.
