Apple + Potato Hash

Ingredients 

Number of Servings: 2

  • FEATURED: 2 medium-large potatoes, diced small

  • FEATURED: 2 medium-large apple, cored and diced small

  • ½ red onion, diced small 

  • 2 cloves garlic, minced 

  • Fresh/dried rosemary, Sage and/or Thyme (at least 2 preferred) 

  • 3 slices of bacon (optional) 

  • 1 egg (optional) 

  • Salt and pepper, to taste

Prep Time: 10 min

Cook Time: 20 min

Total Time: 30 min

  1. (Optional): Slice the bacon crosswise into little strips. Add to a room temperature medium sauté pan without grease and turn heat on medium high. Cook bacon until crispy, remove from the pan with a slotted spoon and drain on a plate lined with paper towel. 

  2. Using the baking grease in the pan for your cooking oil/using 1 Tbsp olive oil, get the pan hot over medium heat and add the potatoes, onions, and herbs and a hefty pinch of salt and pepper. Sauté over medium heat until potatoes start to brown. 

  3. Add the apples and sauté an additional 5-7 minutes, until apples are soft and potatoes are soft on the inside but crispy on the edges. 

  4. Remove the edges, stir in the crispy bacon, and serve immediately. 

  5. (Optional): Add a fried egg to make a complete breakfast!
